How to do a bacon latticed turkey

Christmas turkey with bacon lattice 2012I think this is the first time I’ve had half an hour to sit down and actually write a blog post, what with all the December client interior jobs, tenants in & out and dealing with Mr M’s festive foot operation – something had to give. With what seemed like, sorry no…. with what WAS only 24hrs preparation for Christmas, I’m amazed we didn’t all just go out for a curry.

Thanks to the Big Green Egg BBQ Co for giving me the inspiration to turn 2012’s turkey into a latticed work of bacon art – it looked fab and tasted amazing, helped a little by my herb & chorizo butter nestling under the skin.

It was so very easy to do. We’d a 14lb turkey which I stuffed and herb buttered then roasted under loose-ish foil at Fan 160 for 2hrs. None of this soaking in brine or basting palaver, totally unnecessary. Took the turkey out and latticed with bacon, back in the oven for an hour, taking to foil off after 30mins. Out of the oven, foil back on then two tea towels over the top and let rest for an hour whilst the potatoes & parsnips roast. A turkey this size will be rested, lovely, juicy, ready to eat and still hot even after an hour out of the oven. Simples!

So that’s Christmas done and dusted, time to get blogging again.

I can’t wait to post the images of all the jobs we’ve been working on over the next few weeks, we’re so proud of them…. what a year!!
